A true specialty in Normandy, the Norman tart is both delicious and tasty.
Ingredients for 4 persons :
- 5 apples (elstar)
- 30g butter
- 2 cl of calvados
- 1 shortbread roll
- 2 tbsp. slivered almonds
- 30 g of fresh cream
For the praline:
- 50 g semi-salted butter
- 100 g sugar
- 50 g flour
- 50 g ground almonds
- 1 tbsp. tablespoon ofcinnamonin powder

For the praline:
- Take the butter out of the refrigerator 30 minutes before using it.
- In a salad bowl, place the butter, work it with a fork, incorporate the sugar and flour.
- Add the almond powder and cinnamon.
- Reserve.
- Peel and wash the apples, remove the core. Cut the flesh into 1 cm cubes.
- Melt the butter in a frying pan, sauté the diced apples.
- Flambé with Calvados.
- Roll out the shortbread, place it in a non-stick pie dish. Spread the diced apples on top, cover them with praline.
- Bake and cook for 20 to 25 minutes.
- Remove from the oven, unmold and place on a rack.
- Serve the tart warm, sprinkled with slivered almonds and accompanied by crème fraîche.

You can make your own shortbread dough using a robot :
- Place 250 g of flour, add 125 g of sugar and 125 g of soft butter.
- Mix gently to coat the butter in the flour.
- In the center, place a pinch of salt, a beaten egg and the seeds of a vanilla bean.
- Mix quickly.
- Shape into a ball, wrap in cling film and let stand for 1 hour in the fridge.
